Chicken Chili

1 lb ground chicken

2 tsp olive oil

1 red bell pepper chopped

1 yellow bell pepper chopped

1 onion chopped

1 14.5 oz fire roasted tomatoes

1 4oz can diced green chilis

1 tablespoon chili powder

1 tsp salt

1 tsp cumin

2 cups chicken broth

1. Start by sautéing the onion and peppers in the olive oil in a large stock pot

2. Once they begin to cook for about 5 min add the chicken and cook

3. Season with salt, cumin, chili powder and continue to cook until chicken is cooked through

4. Add diced chilis, tomatoes and chicken broth

5. Let simmer on low for 20-30 min

6. Serve topped with sliced avocado or guacamole
